Description
The omelette with egg whites is an easy and versatile recipe that can be transformed into a complete and nutritious dish. In this version it is even lighter thanks to the AeQ PROTEIN egg whites, ideal for obtaining a preparation rich in proteins and with a delicate flavour. Cooking over low heat with the lid allows the omelette to swell and maintain a soft texture, while the topping with grilled chicken, cherry tomatoes and spinach adds colour, freshness and flavour. A perfect solution for a savory breakfast, but also for a quick lunch or a light dinner, ready in a few minutes.
Procedure
Prepare the mixture:
in a bowl combine the egg whites, salt, pepper and chopped chives. Beat with a fork until smooth. If you want a richer consistency, you can add a spoonful of grated cheese.
Cook the omelette:
heat a non-stick pan of approximately 22–24 cm with a drizzle of oil, then pour in the egg whites and distribute them evenly.
Cover the pan:
immediately cover with a lid and cook over low heat. The steam will help the omelette puff up evenly without burning the bottom.
Add the filling:
when the surface of the omelette is almost set, after about 3-4 minutes, arrange the grilled chicken, cherry tomatoes and spinach on one half.
Close the omelette:
with a spatula, fold the other half over the filling, allowing the ingredients to be visible. Turn off the heat and let it rest covered for about 30 seconds before serving. Complete with fresh chives and a few basil leaves for decoration.
